Provençale Chicken
Ingredients
- 4 (6-ounce) skinned chicken breast halves
- 2 teaspoons dried basil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup diced yellow bell pepper
- 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
- 1 (14 1/2-ounce) can pasta-style tomatoes, undrained
Preparation
- Place the chicken in an electric slow cooker; sprinkle with basil, salt, and black pepper. Add the bell pepper, beans, and tomatoes. Cover with lid; cook on low-heat setting for 8 hours.

Ooo, that looks amazing. The thing I hate about slow cooker recipes is that the bulk of the ones I want to make seem to take around 5-6 hours, where I'm looking for something to take 8-9 so I can set it when I go off to work in the morning. I guess I'll just need to save this one for the weekend. :)
