Provençale Chicken Recipe

Thanks to my Cooking Light Slow Cooker cookbook and my amazing crock pot, I prepared last night's dinner in 5 minutes and in 6 hours, it was ready! This had to be one of the easiest and quickest slow cooker recipes I have ever used. If you are really out of time one night, throw this meal together and enjoy!

Provençale Chicken


Ingredients
  • 4 (6-ounce) skinned chicken breast halves
  • 2 teaspoons dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup diced yellow bell pepper
  • 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
  • 1 (14 1/2-ounce) can pasta-style tomatoes, undrained 
Preparation
  • Place the chicken in an electric slow cooker; sprinkle with basil, salt, and black pepper. Add the bell pepper, beans, and tomatoes. Cover with lid; cook on low-heat setting for 8 hours.

The thing I hate about slow cooker recipes is that the bulk of the ones I want to make seem to take around 5-6 hours, where I'm looking for something to take 8-9 so I can set it when I go off to work in the morning. I guess I'll just need to save this one for the weekend. :)
