The Royal Wedding

It's official! Prince William and Princess Catherine are husband and wife!


I was already waking up at 5am and I couldn't help but watch the coverage. What I was most excited to see, like everyone else, was Kate's wedding dress, and she did not disappoint!



She looked absolutely gorgeous and I looove her dress! It's so simple and elegant and perfect for her.

When she arrived at the altar, Prince William told her she was beautiful and it was a touching moment.




It was such a beautiful ceremony. Did any of you watch or care about the royal wedding?

Provençale Chicken Recipe

Thanks to my Cooking Light Slow Cooker cookbook and my amazing crock pot, I prepared last night's dinner in 5 minutes and in 6 hours, it was ready! This had to be one of the easiest and quickest slow cooker recipes I have ever used. If you are really out of time one night, throw this meal together and enjoy!

Provençale Chicken


Ingredients
  • 4 (6-ounce) skinned chicken breast halves
  • 2 teaspoons dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup diced yellow bell pepper
  • 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
  • 1 (14 1/2-ounce) can pasta-style tomatoes, undrained 
Preparation
  • Place the chicken in an electric slow cooker; sprinkle with basil, salt, and black pepper. Add the bell pepper, beans, and tomatoes. Cover with lid; cook on low-heat setting for 8 hours.

Water For Elephants


Over a month ago, I wrote a book review about Water for Elephants. Last Thursday, I was lucky enough to catch a screening of the movie before it came out. I was a little hesitant at first, not know how Robert Pattinson's acting skills were, but I was pleasantly surprised.

The movie stays true to the book and mostly leaves out the details of the old man in the nursing home. The other difference is that the characters August and Uncle Al are pretty much combined into one, played by Christoph Waltz.

I enjoyed the movie and thought everyone did a great job at capturing the characters. For those of you that have read the book, you know that there is some animal abuse featured, which is also portrayed in the movie (and doesn't go over well with animal lovers). Other than that, it is nicely done.

I Need Your Help: Miles For Moffitt

I hope everyone had a fabulous Easter weekend and got to share the time with family and friends. Ours was pretty low key but we had a great time with our family.


On May 14th, I am participating in Miles for Moffitt, which raises money for cancer research and awareness. I will be doing the one mile and I joined the Speak Out For Moffitt team, which alerts people when serious legislation is up that affects cancer funding on the state and federal level. Just this year, I've had to email State and US Senators and Representatives to keep cancer research funding on the budgets that have been voted on. Thankfully, no major cuts have been made to cancer research but it's because of programs like Speak Out For Moffitt that allow us to make our voices heard.

If you have cancer or know someone who has had or currently has cancer, I ask you to make a donation to our team. Your donation goes directly to Moffitt Cancer Center, which is on the cutting edge of cancer research in the country. So far, they have raised $31,631 but they have a goal of $75,000 that they would really love to reach.

Chocolate Soufflé

One of my husband's favorite desserts is chocolate soufflé and he has been begging me for 6 years to make it for him. I've told him how hard and complicated soufflé can be, but I finally caved in and decided to try it. I was able to find a less complicated recipe on Real Simple's website (I love that magazine!).

I prepared it earlier in the day then refrigerated it and popped it in right as we were eating.

They weren't as high as I would have liked but according to the hubs, the taste and texture were right on, so in a way it was a success. I made an Espresso custard sauce to pour in the middle and that was one of my favorite parts.

3 Year Anniversary

A letter to my love,


             Five and a half years ago, I met you after a concert and we became friends. Something about you intrigued me and I wanted to know you better. How was I to know that all the innocent flirtation would lead to dates.


             Within a few months, I knew you were the guy I was going to marry. Apparently, you did as well since your parents claim you told them the same :). We had some rough patches but we stayed strong and grew from each of our mistakes.


           After a year and a half of dating, you asked me to marry you on Valentine's Day and it was the happiest day of my life at that point. I knew that it was right and you were the love of my life.

         
               On April 19, 2008, we said "I do" and made it official. We were husband and wife and starting our new life together. I didn't think anyone could be as happy as me.


           These past 3 years have flown by so fast and we've had some wonderful experiences together. I love that we are that married couple that are still constantly lovey dovey in public, sometimes too much so in front of our friends. We have a wonderful life and you make me so happy every day. I love you so much and I can't wait to spend the rest of my life with you.

Tailor-Made


Clothes are not made to fit everyone perfectly, as I'm sure you've discovered. If you don't have specific body type, some items, no matter how much you love them, will always be just a little bit off. Or, maybe you've lost weight and no longer fit into your favorite jeans or dress. It's times like these when a tailor is needed.

Alterations can be expensive, but it's best to shop around and read reviews online to see if they are reliable and affordable. I personally have been searching for someone near by to do some tweaking on some of my outfits and it can be hard to find someone. I had a great tailor that I used for my bridesmaid dresses last year but she is also more than 20 miles away.

If you have found a tailor you like and trust, then you are set! Not only can you look to them to make your clothes fit wonderfully, but you can also buy things at discount, even if they don't fit right, and still save money getting them tailored to you.

You  may remember these gorgeous Louboutin Pink Ruffle shoes that Carrie wore in SATC. They just scream romance and spring.

I was perusing the DSW clearance rack (one of my favorites) when I stumbled upon these adorable black ruffle heels


They took me back to SATC and they were a great price... just $17! I think I am going to be a ruffle girl this spring :)

Mildred Pierce


Did anyone watch the HBO mini-series "Mildred Pierce"? The finale aired last Sunday and boy, was this some mini-series! I wasn't aware of the book or 1945 movie so I knew nothing about the storyline but Kate Winslet was flawless in her performance. Her supporting cast was outstanding as well; Melissa Leo as the understanding best friend, Guy Pearce as the mysterious lover, and Evan Rachel Wood as the mature and venemous daughter.


The story is about Mildred Pearce, who makes some great pies, and her struggles to be a single mother and gain respect from her daughters. She has to work as a waitress in the 1930's to make extra money before deciding to create a venture of her own. Along the way, she meets the mysterious Monty Beragon, who becomes her lover.


As her daughter Veda gets older, she starts getting wild and soon runs away from home. While she is gone, she is discovered and becomes a successful opera singer, unbeknown to Mildred until Bert shows her in the paper. She is desperate to connect with her daughter again and after Mildred and Monty get married, Veda comes back to reconcile. Mildred is then thrust into Veda's success and remains supportive as she rises, though at a terrible price.


I thoroughly enjoyed the entire mini-series and I would be very surprised if Kate Winslet was not nominated for numerous awards.

If you don't have HBO, it should be out on Netflix soon. You don't want to miss it :)

Rasberry-Balsamic Chicken with Shallots

The spring is such a great time for fresh, green vegetables and delicious fruit recipes. I have been cooking healthier meals recently and this recipe looks delicious! This would be great served with asparagus, sugar snap peas, or broccoli with some brown rice :)


Rasberry-Balsamic Chicken with Shallots

Ingredients
3/4 cup  seedless all-fruit raspberry jam
1/4 cup  balsamic vinegar
1/2 teaspoon  salt
1/4 teaspoon  freshly ground pepper
4   4- to 5-ounce boneless, skinless chicken breasts, tenders removed (see Tip)
2 1/2 teaspoons  extra-virgin olive oil
1/2 cup  chopped shallots, (2-3 large)
1 1/2 teaspoons  minced fresh thyme
Directions
1. Combine jam and vinegar in a small pan over medium-low heat. Cook, stirring often, until the jam is dissolved, 3 to 4 minutes. Remove from heat, stir in salt and pepper and let cool slightly. Reserve 1/2 cup of the sauce. Place chicken breasts and the rest of the sauce in a large sealable plastic bag. Seal and shake gently to coat. Marinate in the refrigerator for 1 to 1 1/2 hours.
2. Heat oil in a large nonstick skillet over medium-high heat. Add shallots and thyme and cook, stirring often, until the shallots begin to soften, about 1 minute. Remove the chicken from the marinade (discard marinade). Add the chicken to the pan and cook until just beginning to brown, 2 minutes on each side. Add the reserved raspberry sauce; stir to melt the jam and coat the chicken. Reduce heat to low, cover and cook until the chicken is cooked through and no longer pink in the center, 6 to 10 minutes. Serve immediately.

Weekend Fun

Hey everyone! I hope you had as fabulous a weekend as I did :)


Saturday morning, we participated in our community's garage sale and I was pleasantly surprised that we sold so much stuff. The remaining items will be donated to the Salvation Army and the clothes will be donated to the Metropolitan Ministries.

After the garage sale, we decided to get some shopping done and I ended up getting some much needed dresses and a pair of pink wedges for spring :) Then I headed off to do what I had been wanting to do for months...


I got my hair chopped off! I am loving the length and how easy it is to style now. My hairstylist ended up taking off about 8 inches of hair, which is crazy! The hubby loves it too so I'm really happy with it.

Sunday, we were invited to go over to our friends' house and partake in a lovely Sunday brunch. She really went all out and I brought the mimosas.


Then we walked around USF's annual plant sale and ended the night at my grandparents for some barbecue chicken. All in all, it was a fun and productive weekend :)

This Pale Girl Is Wearing Coral!

Coral and I don't get along. Not the real coral... I love that stuff. I'm referring to the color. Coral is really hard to pull off, especially when you are pale. It's been big in the spring for years but I've never had the desire to try it. When I received the Fire & Ice collection from Revlon, there were a couple of colors included that were outside my comfort level... coral being one of them.


The matching polish and lipstick is called Demure and it's a throwback to the 50's and 60's where coral was a very popular shade. The lipstick is very natural on me but I could tell the nail polish was true to color. I decided to give it a try this week and see how coral would look on my nails. Suprisingly, it's not bad!


I couldn't get a good picture of my nails so I borrowed this picture from Imperfectly Painted. As you can see, it's a very pink coral color that is great for spring. It makes me want to go to the beach!

Anthropologie April Catalog

When I received the April catalog from Anthropologie, I swooned. There are so many outfits I love and only wish I could own. I also love the setting (I think it said it was photographed in Columbia). It makes me want to go travel! If you haven't seen it, here are a few of my favorites:
